For years I have made Mollie Katzen's pumpkin and banana breads with protein powder and assorted add-ins. I finally noticed her third option with applesauce and gave it a try in the new KAF bread pan. It's not shown in the on line recipe from her site but it's an exchange of the banana for the same amount of unsweetened applesauce, and adding a tsp. of Cinnamon.
